Don’t Underestimate the Garlic Scape…

Garlic scapes are the delectable pre- garlic bulb teaser that’s usually available at farmers markets, but often overlooked. These are so yummy, if you don’t use them, bring ‘em back and I’ll use them!

Garlic Scape Pesto

¾ to 1 c chopped scapes

¾ c olive oil

¼ c pine nuts or walnuts

½ c grated parmesan cheese

½ t salt

Pepper to taste

Put scapes and nuts in processor, blend until smooth. Add oil, blend again. Transfer to a bowl; add cheese, salt and pepper.

Will keep in airtight container for a week in refrigerator, or freeze for future use – like I do!

· Radishes

· 5 Star Lettuce Mix

· Garlic Scapes

· Scallions
